Are you a “Rfissa” lover? I am

Are you a Rfissa lover? I am. Rfissa is one of the delicious dishes in Morocco. It is usually made of freshly made soft tiny layers of bread top up with juicy chicken and fenugreek seeds (الحلبة) which I love. It is usually cooked to feed pregnant women that are about to go to labor to provide them with source of energy and emotional support of family. The making processing time may seem long, but it gives an amazing atmosphere for family gathering. Rfissa usually served hot in one big plate called Kass’ria.

One of the Rfissas we have the Rfissa 3am’ia means has no eye. The word 3am’ia could be referring to the chicken because this type of Rfissa is made only with hard or not fresh bread cut into small pieces and juicy vegetable sauce. I personally find it very interesting kind of Rfissa because it recycles the-not-used bread and turn it into a delicious meal. This Rfissa could contain lentils and olive oil.
