I make little bunches of the famous be99oula,parsley,coriander and celery,taking out the weeds
I chop it all little by little,adding a few stalks....I put the chopped herbs in the top of a couscous steamer,I wash with a lot of water and strain.......then cook in a small thick-bottomed saucepan with the cloves of garlic left whole without addind any water.
When the chopped up herbs can be crushed easily,the famous be99oula is cooked
take out the garlic cloves and skin them....crush them and out them back in the saucepan.........addind the salt, paprika,chilli,cumin and oil and stir over the heat until the water has completely evaporated.....add the lemon juice and olive.......leave a few minutes on the heat,stirring constantly.
check the seasoning and remove from the heat.....
Arrange on a dish decorated with the olives and preserved lemon.......leave to cool before eating
